In the kitchen 8 steps

  1. In a mixing bowl, combine the flour (240 g), sugar (40 g), grated lemon zest (1 piece) and a pinch of salt (to taste).
  2. Add the egg (1 piece), olive oil (40 ml) and white wine (60 ml), then knead for 5 minutes until the dough is smooth and firm.
  3. Wrap the dough in cling film and leave to rest for 20 minutes at room temperature.
  4. Preheat the oven to 190 °C and line the baking sheets with baking paper.
  5. Roll out the dough in small portions, as thinly as possible: you should almost be able to see the work surface through it.
  6. Cut into rectangles with a fluted pastry wheel, make one or two slits in the centre of each and place them on the baking sheets without letting them touch.
  7. Bake for 6 to 8 minutes, until the edges begin to turn golden.
  8. Leave to cool on a wire rack, then dust generously with icing sugar (40 g).

Tip: The thinner the dough, the lighter and more bubbly the chiacchiere: use very little flour on the work surface and roll it out in batches.
