In the kitchen 6 steps
- Finely chop the shallot (1 piece). Drain the tuna (100 g) and flake it. Grate the lemon zest (1 piece) and squeeze out a little juice.
- Cook 360 g of small shells in a large pan of salted boiling water, following the time on the packet.
- Meanwhile, soften the shallot for 2 minutes in 2 tbsp of olive oil, add the peas (240 g) and a small glass of water, cover and cook for 8 minutes over low heat.
- Off the heat, add the tuna cream (100 g) to the peas with a splash of lemon juice and a small ladleful of pasta cooking water, and stir to make a smooth sauce.
- Drain the pasta, add it to the pan and toss for 1 minute over very low heat.
- Add the flaked tuna, lemon zest and chopped parsley (1 bunch), mix gently, season with pepper and serve.
Tip: Do not let the tuna cream boil: added off the heat, it stays creamy and does not split.
