In the kitchen 6 steps
- In a bowl, mix the ricotta (160 g) with the truffle cream (40 g) and olive oil (20 ml) until smooth. Season with pepper.
- Spoon it into a small bowl and smooth the surface with the back of a spoon.
- Cut the slices of prosciutto (8 slices) in half lengthwise to make long strips.
- Take a breadstick (100 g) and wrap a strip of prosciutto in a spiral around its upper half, pulling it gently tight: the prosciutto will stay in place on its own.
- Repeat with the remaining breadsticks, leaving the bottom ends free so you can hold them.
- Arrange them in a tall glass or flat on a board, next to the bowl of dip, and serve immediately.
Tip: Wrap the prosciutto around the breadsticks at the last minute: contact with the ham makes them absorb moisture and soften quite quickly.
